The Texas “Reserve” Horseradish BBQ Sauce
The Texas “Reserve” Horseradish BBQ Sauce
1 cup apricot preserves
¼ cup Crown Royal Reserve
¼ cup tomato paste
¼ fresh lime juice
3 tablespoons cider vinegar
2 tablespoons ketchup
1 tablespoon soy sauce
2 tablespoons of Worcestershire sauce
2 tablespoons of minced fresh shallots
1 tablespoon of fresh ginger
2 cloves garlic minced
½ of hot chilli seeded and minced
½ teaspoon of hot pepper flakes
Kosher salt and fresh ground black pepper to taste
1 to 2 tablespoons of prepared white
Horseradish- 1 to 2 tablespoons to taste
Put everything in a sauce pan except the horseradish and simmer with medium heat for about 10 minutes.
To Thicken- If needed, add water then let cool to room temp and then add the horseradish (stir frequently ) while cooking.
Royal 16 Glaze
½ stick of unsalted butter
4 cloves of thin slices of garlic
1 cup brown sugar
1 cup Cask no.16 Crown Royal
½ cup pineapple juice
½ ketchup
3 tablespoons of fresh lemon juice
½ teaspoon freshly ground black pepper
1. Melt the butter in a heavy sauce pan over medium heat add the garlic and cook to a golden color 3-4 minutes
2. Stir in the remaining ingredients and simmer over medium heat 5 minutes use right away
